2 tomatoes (~7 oz)
2 tsp olive oil (extra virgin)
2 tsp fresh basil (chopped)
2 ¾ oz feta cheese
8 whole grain crackers (no added sugar) (~1 oz)
optional: ½ garlic clove (~⅛ oz)
optional: a tiny bit of salt
optional: ¾ tsp black pepper
Wash and dice the tomatoes. Peel and chop garlic. Wash and chop basil. Add salt, pepper, and oil and mix all the ingredients in a bowl.
Add the feta cheese and microwave for one minute (Heating optional. Can be served hot or cold).
Serve with crackers and enjoy!
